MBA Frittata
Ingredients:
3 eggs
¼ cup chopped fresh asparagus
¼ cup crumbled cooked bacon
¼ cup chopped fresh mushrooms
¼ cup havarti dill cheese shredded 1 teaspoon butter
Directions
Place butter in small skillet or frying pan. Preheat the skillet over medium heat. Beat 3 eggs together and pour it into the skillet. Add crumbled bacon, fresh asparagus, fresh mushrooms and top with havarti dill cheese. Cover with a lid. Frittata is done when the eggs are completely cooked. The frittata will be light and airy and should slide right out of the pan onto a plate. Garnish with fresh fruit. Serve immediately.
Muffin Tin Omelets
Ingredients
9 eggs
½ to 1 cup shredded cheese
1 cup chopped or crumbled cooked meat 1 teaspoon dill or other spice
Directions
Turn oven on and pre heat oven to 350 degrees. Place oven rack in center of oven. Beat 9 eggs in a bowl add dill or your favorite spice. Spray muffin tins with cooking spray. Pour egg mixture into muffin tins until ½ full. Add your favorite meat (bacon, sausage, ham or chicken). Add your favorite cheese. You can add your favorite vegetables as well. The muffin tin should be ¾ full.
Bake at 350 degrees for 15 minutes. Insert toothpicks into a couple of muffins, if it comes out clean they are done. Cooking time will vary depending on size of muffin tin and ingredients used. Cool for 5 minutes in muffin tin then remove and serve. Store in refrigerator, microwave for 30 seconds for a quick easy breakfast.
Lox Wrap
Ingredients
Cream cheese
Capers
Diced onion
Lox salmon cured in salt
Pepper
Low carb tortillas
Directions
Spread cream cheese onto low carb tortilla. Add capers, diced onion and pepper. Layer Lox on top of tortilla and roll up like a burrito.
Lunch
Cheeseburger
Ingredients
1 pound ground beef
4 slices of your favorite cheese
3 tablespoons Dale’s seasoning
4 low carb tortillas
Favorite condiments for burgers
Directions
In a bowl mix 1 pound ground beef with 3 tablespoons of Dale’s seasoning. Shape ground beef into patties. You can make the patties the size you would like. Place oven rack on the top level for broiling burgers. Pre heat broiler use the high setting. Place burgers on broiling pan and broil for 5 to 7 minutes on each side depending on size of burger and how you prefer your burger cooked. Add cheese to burger and return to broiler to melt cheese. Remove from broiler. Wrap in low carb tortilla and add favorite condiments.
Taco Salad
Ingredients
1 pound ground beef
1 packet taco seasoning
Shredded cheese
Salsa
Chopped onions
Sliced black olives
Black, pinto or kidney beans
Chopped lettuce
Sour cream
Guacamole or chopped avocados
Chopped tomatoes
Tortilla chips
Directions
Brown ground beef in a pan on the stove. Drain meat using a strainer return to pan. Add taco seasoning packet follow instructions on packet. Place lettuce, onions, beans in a bowl. Add taco seasoned meat top with, tomatoes, avocados, cheese, salsa and black olives. Garnish with tortilla chips.
Dinner
Spaghetti with Spaghetti Squash
Ingredients
1 pound ground beef or mild Italian sausage 2 teaspoons finely diced garlic
1 large can diced tomatoes
2 cans tomato sauce
2 small cans tomato paste
1 teaspoon oregano
1 teaspoon basil
½ cup shredded parmesan, Romano and asiago cheese 1 teaspoon Italian seasoning
1 large or 2 small spaghetti squash
Directions
Use a cutting board and a large sharp knife cut spaghetti squash in half. Use a large metal spoon to remove seeds and pulp. Place spaghetti squash in microwave safe bowl, add ½ inch water, cover with plastic wrap and microwave for twenty minutes or until fork tender. Brown ground beef or Italian sausage in pan. Drain meat in strainer. Return to pan and add garlic.
Add diced tomatoes, tomato sauce, and tomato paste. Simmer for 5 minutes. Add basil, oregano and Italian seasoning. Simmer 10 minutes or until thick. Remove squash from microwave. A fork should go into squash easily. Remove the squash from skin using a large spoon. Place squash in bowl and separate with a fork. The spaghetti squash will break up and look like spaghetti noodles. Serve immediately. Place spaghetti squash in plate add tomato sauce and top with shredded parmesan, Romano and asiago cheese.
Chicken Zucchini Alfredo
Ingredients
4 pre cooked chicken breast diced
4 small zucchini squash sliced julienne
1 bottle Alfredo sauce
½ cup ground parmesan, Romano and asiago cheese Salt and pepper
1 to 2 tablespoons olive oil
Directions
Use a frying pan to sauté zucchini with hot olive oil then sauté for ten minutes until fork tender.
Add Alfredo sauce stir to cover zucchini. Add chicken simmer for 5 minutes until chicken is heated.
Serve immediately. Add ground cheese and salt and pepper for garnish.
Dessert
Butterfinger Shake
Ingredients
2 cups crushed ice
¼ cup heavy cream
¼ cup coconut water
1 tablespoon chocolate protein powder
2 packets Splenda
2 teaspoons peanut butter
Directions
Place all ingredients in a blender. Blend until smooth. Serve in tall glass with a long spoon. Garnish with whipped cream.
Chocolate Strawberries
Ingredients
2 cups fresh strawberries
1 cup sugar free chocolate
Directions
Clean strawberries. Set on paper towel to dry, and then place in refrigerator. Melt chocolate in a double boiler until smooth. Remove strawberries from refrigerator and dip each strawberry in chocolate. Place on wax paper to dry then store in refrigerator.
